Guatemalan Paches Recipe in English
10 pounds of potatoes with skin
1/2 pound of Maseca (Mix to make tortillas)
1 French bread
2 pounds of pork loin (cutted in 40 little squares)
2 1/2 pounds of tomatoes
1/2 pound Tomatillos
1 big slice of white onion
4 red bell peppers
3 Chiles guaque
Salt
1/2 pound of pork fat or 1 cup of oil
3 packages on hojas de maxan (You'll find them in Latino stores in the Frozen section !!! A
Instructions:
First we cook together the tomatoes, tomatillos, the garlic clove, the onion, the red bell peppers and the chiles guaques, when is cooked we place in the blender, and we add the teaspoon of black pepper, and the achiote, it has to look very red !!!
Then we cook the potatoes with the skin and salt, when they are cooked, peel them and smash them but not too much, leave some chunks of potatoes and we mix to that the 1/2 punf of pork fat or the oil
Get ready the tortiya, just add water, and salt, and make sure you have a thick mix, not too watery !! And mix this to the smashed potatoes
Soak in water the french bread, strain and blend it, and add to the potatoes
Mix the potatoes with the sauce, make sure we starin the sauce ...Mix it really good, and season
Then in the hoja de maxan place a big spoon of the mix, and a piece of pork loin in the middle, fold it in the four ends, and place in a big pot some hojas de maxan at the bottom, place the paches, and add 3 litters of water, and cook them for about 3 hours !!!!
